French toast is a classic breakfast dish in the US. But French toast is also known in many more countries, in different variations. In Germany we also call this dish “Armer Ritter (Poor Knight)”. Once the recipe was used to recycle the remnants of the valuable bread. The bread slices were turned in eggs and milk and baked in fat. These vegan French toast rolls with apple-cinnamon filling are a reinterpretation of the popular classic and perfect for breakfast, as a dessert or simply as a snack.

Baked not Fried
The French toast rolls taste best warm and fresh from the oven. Oven? You have read correctly, these rolls are not fried in a pan, as is usual with French toast, but baked in the oven. This means they contain less fat and are healthier. Besides, the preparation only takes 20 minutes and you only need standard ingredients, which you probably have in your pantry anyway.
The preparation is super simple. On the pictures above you can see the preparation step by step. Simply cut the edges off the toast (1), roll the slices flat with a rolling pin (2) and spread the slices thinly with vegan butter or margarine (3). Cut the apples into small pieces and bring to the boil with water, starch, sugar, cinnamon and vanilla. The filling is then spread on the toast slices (4) and the toasts are rolled up (5). Then roll the rolls in a mixture of sugar and cinnamon (6) and bake them in the oven until they are crispy.
These rolls are perfect for breakfast or served with a scoop of vegan vanilla ice cream for dessert.
French Toast Rolls
Ingredients
For the French Toasts:
- 10 slices toast bread
- 70 g brown sugar
- 1 tsp cinnamon
- 50 g vegan butter
For the Apple-Cinnamon Filling:
- 2 apples
- 100 ml water
- 1 tbsp brown sugar
- 1 tsp corn starch
- 1 tsp cinnamon
- 1 pinch vanilla
- 1 tsp lemon juice
Instructions
For the Apple-Cinnamon Filling:
- For the filling, peel the apples and cut them into small cubes.
- Mix water, corn starch, brown sugar, cinnamon, vanilla and lemon juice in a saucepan and bring to the boil at medium heat. Stir until thick.
- Add the apple cubes and cook for 2 minutes. Remove the pan from the heat and allow to cool.
For the French Toasts:
- Cut off the edge of the toast slices. Then roll flat with a rolling pin. Spread a thin layer of vegan butter on one side of the toast slices.
- Place the toast slices with the butter side down and spread about 1-2 tablespoons of the filling on top in a central line. Then carefully roll the toast into a wrap. Press the “closing edge” down a little.
- Mix brown sugar and cinnamon in a deep plate.
- Roll the toast rolls in the sugar and cinnamon mixture.
- Place the rolls on a baking tray with the cutting edge facing down and bake at 180°C for about 15-20 minutes until crispy and slightly browned.
- Serve warm immediately. If you like, you can add some agave syrup or vegan vanilla ice cream.
