Homemade Nut Nougat Crème - Vegan Nutella

For everyone with a sweet tooth it is the ultimate bread spread for breakfast: Nutella, nutspli or nut nougat crème. Unfortunately, a glance at the list of ingredients usually shows that milk powder is one of the ingredients. In addition, almost all ready to buy spreads contain lots of sugar and palm oil from questionable origins. If you don’t want to buy these products but still want the full taste of delicious nut nougat crème, simply make your own vegan Nutella.

I got this recipe from the amazing cookbook “Vegan for Starters” by Attila Hildmann. The cookbook contains the simplest and most popular recipes from the four previous books. I bought the book at the very beginning when I became vegan and have used it many times since. The vegan Nutella called “Berlin Dream” was one of my favourite recipes, because the vegan nut nougat crème can be made in no time at all and tastes heavenly chocolaty and nutty.

Chocolate hazelnut spread

The original recipe calls for hazelnut puree. If you don’t have a good blender, you should buy it in the supermarket. However, I made the hazelnut puree myself and it was super simple and sooo delicious.

Make hazelnut puree yourself

Simply place the hazelnuts on a baking tray and roast them at 180°C for 10 minutes. Then let them cool and remove their shells. Afterwards you have to mix the nuts in a powerful mixer or blender to a creamy puree. It is important to let the blender run 1-2 minutes. Because in the beginning you will only produce hazelnut crumbs. The heat generated during mixing then dissolves the fat from the nuts and creates a creamy hazelnut puree.

The rest of the preparation is super simple. Simply melt the dark chocolate and vegan butter and mix it with the hazelnut puree, icing sugar, vanilla and a pinch of salt and stir until a homogeneous nut nougat crème is obtained. Then pour the crème into clean glasses and place them in a cool place. And you are ready to indulge your homemade vegan Nutella.

  • 200 g hazelnuts alternative store bought hazelnut puree
  • 200 g vegan butter or margarine
  • 100 g icing sugar
  • 100 g dark chocolate
  • ½ vanilla pod alternatively 2 sachets of vanilla sugar
  • 1 pinch salt


  • Place the hazelnuts on a baking tray and roast in the oven at 180° for 10 minutes. Then take them out and let them cool.
  • Rub the hazelnuts between your hands to remove the peel. It does not have to be completely removed.
  • Then place the nuts in a multi chopper. It may be necessary to divide them into two portions to avoid overloading the blender. Then, depending on the blender, crush the hazelnuts for about 2-3 minutes until a creamy mixture is obtained. In the beginning, the hazelnuts are still crumbly, but the heat generated during chopping causes the fat to separate from the nuts and form a fine cream.
  • Break the chocolate into small pieces and melt in a water bath.
  • Halve the vanilla pod lengthwise and scrape out the pulp with a knife.
  • Then put the hazelnut mush, vegan butter, icing sugar, melted chocolate, vanilla and salt into a blender. Mix until a fine chocolate cream is obtained.
  • Fill into clean screw glasses and keep in the fridge.
