Vegan Grill Sticks Made of Seitan

Ingredients

For the grill sticks:

  • 150 g Seitanfix
  • 1 Tbsp chickpea flour á 20g
  • 1 Tsp yeast flakes
  • 2 Tsp onion powder
  • 1 Tsp garlic powder
  • 2 Tsp paprika powder
  • 2 Tsp salt
  • 2 Tsp sugar
  • 2 Tsp rosemary
  • 1 Tsp cayenne pepper
  • ½ Tsp cinnamon
  • 100 ml water
  • 1 Tbsp tomato puree
  • 1 Tbsp soy sauce
  • 1 Tbsp olive oil
  • 1 Tsp Liquid Smoke
  • 1 Tsp mustard

For the marinade:

  • 1 Tbsp tomato puree
  • 1 Tbsp balsamic
  • 1 Tbsp maple syrup
  • ½ Tsp Liquid Smoke
  • 1 Tsp sweet mustard
  • 2 cloves of garlic clenched
  • ½ Tsp salt
  • 2 Tbsp paprika powder
  • ½ Tsp cayenne pepper
  • 1 Tsp pepper
  • 1 Tbsp soy sauce
  • 2 Tbsp oil

Otherwise:

  • 10 Wooden Skewers alternatively metal skewers

Instructions

  • For the grill sticks:
  • Soak the wooden skewers in water for 30 minutes so that they do not burn so easily.
  • For the grill sticks, mix all the dry ingredients together in a large bowl.
  • Mix the liquid ingredients separately. Add the liquid to the Seitanfix and knead vigorously with your hands for several minutes. A firm, tough dough should be formed without dry spots.
  • If the dough becomes too soft or sticky, knead in a little more Seitanfix.
  • Divide the dough into 10 parts and roll and knead these parts into thin sausages or strips as long as possible.
  • Take a wooden skewer, take one end of the Seitan strip and skewer it on the stick. Then wrap the remaining strip tightly around the skewer. Pin the end on the skewer as well.
    Do the same with the other skewers.

For the marinade:

  • Mix all ingredients for the marinade.
  • Coat the grill sticks with marinade from all sides using a baking brush. Leave to stand for at least two hours.
  • Grill the grill sticks on the hot grill evenly from all sides until they are crispy on the outside.
