Vegan BBQ Burger made from Banana Peels with Coleslaw

For this fancy burger banana peels are used for a vegan BBQ Pulled Pork replacement. In addition, it is topped with homemade cabbage salad.

Ingredients

  • 4 bananas Organic quality, degree of ripeness: yellow, but firm and not quite ripe
  • 3 tbsp oil
  • 2 tsp smoked paprika powder
  • 1 tsp chili powder
  • 1 tsp mustard
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • ½ tsp cumin
  • 4-5 tbsp water
  • 6 tbsp Barbecue-Sauce
  • salt
  • 100g homemade vegan cabbage salad (alternatively purchased cabbage salad)
  • 2 burger buns

Instructions

  • Wash the bananas well. Cut off the lower end of the banana and peel the banana from bottom to top. Using a spoon, scrape off the white inner part of the peel. Then hold the banana peel by the stem and tear the peel into shreds with a fork. The shreds should be 3-5cm long.
  • In a bowl, add olive oil, paprika powder, chilli powder, mustard, garlic powder, onion powder and cumin (not the salt yet). Mix well and put aside so that it can marinate a little.
  • In the meantime, prepare the coleslaw according to the recipe (see list of ingredients for link).
  • Heat the marinated banana peels in a pan over medium heat. Add a few tablespoons of water to make them steamy and tender.
  • The cooking time depends on how ripe the bananas are (the riper they are, the faster they cook). You should therefore try them regularly. In between, add more water so that they don't burn. As a rule, the banana peels are soft after 5-10 minutes.
  • Add the barbecue sauce and bring to the boil. Season to taste with salt and pepper. Remove from heat and allow to cool for one minute.
  • Halve the burger bun and toast it or bake it in the oven. Brush the halves with BBQ sauce. Then add the banana peel Pulled Pork and cabbage salad and close the bun. Serve immediately and enjoy.
