Yoghurt Melon Dessert with Almond Brittle

A light summer dessert with sweet melon and crunchy homemade almond brittle.

Ingredients

  • 300 g soy yoghurt* alternatively soy quark
  • 1 tablespoon agave syrup*
  • 1/2 galia melon
  • 2 tbsp almonds
  • 1 tbsp brown cane sugar

Instructions

  • Stir the yoghurt until smooth. If you like it sweet, add some agave syrup.
  • Cut the galiamelone in half, remove the seeds and cut into cubes or cut out small balls.
  • Lightly roast the almonds in a pan without fat, then add the sugar and melt. Stir well and caramelise.
  • Pour yoghurt into dessert glasses, drape melon pieces and sprinkle with brittle. Who likes to drizzle the whole thing with some agave syrup.
