Yoghurt Melon Dessert with Almond Brittle

- 300 g soy yoghurt* alternatively soy quark
- 1 tablespoon agave syrup*
- 1/2 galia melon
- 2 tbsp almonds
- 1 tbsp brown cane sugar
Stir the yoghurt until smooth. If you like it sweet, add some agave syrup.
Cut the galiamelone in half, remove the seeds and cut into cubes or cut out small balls.
Lightly roast the almonds in a pan without fat, then add the sugar and melt. Stir well and caramelise.
Pour yoghurt into dessert glasses, drape melon pieces and sprinkle with brittle. Who likes to drizzle the whole thing with some agave syrup.
