Summerroll Bowl with Peanut Sauce

Ingredients

For the Bowl:

  • 1 sachet glass noodles
  • 1 block tofu
  • 2 tbsp sesame oil or other oil
  • 4 tbsp teriyaki sauce
  • ½ red pepper
  • 1 avocado
  • 1 carrot
  • ½ head Roman lettuce
  • ¼ cucumber
  • 1 spring onion
  • 1/4 bunch fresh mint or coriander
  • 1 lime

For the Peanut Sauce:

  • 2 tbsp sesame oil or other oil
  • 2 tsp red curry paste
  • 1 can roasted peanuts
  • 1 can coconut milk
  • 2 tbsp cane sugar

Instructions

For the Peanut Sauce:

  • Put the oil in a small saucepan and heat. Add the curry paste and stir well.
  • Deglaze with coconut milk and stir well.
  • Chop the peanuts into small pieces and add to the mixture. Cook until a creamy consistency is reached.
  • Season with cane sugar and salt.

For the Bowl:

  • Squeeze out the tofu with a clean kitchen towel to remove excess moisture. Cut the tofu into cubes and fry in a pan with oil until all sides are brown.
  • Deglaze the tofu with teriyaki sauce and fry for another minute until the sauce is absorbed. Set aside.
  • For the rest of the bowl, cut the vegetables and salad into bite-sized pieces and arrange in a bowl.
  • Pour hot water over the glass noodles and let them steep for a minute.
  • Pour the glass noodles and tofu into the bowl and garnish with mint, coriander and fresh lime juice. Serve with the peanut sauce.
