Spanish Coca de Verdura

Aromatic vegetables on a crispy beer dough

Ingredients

For the dough:

  • 300 g spelt flour
  • 125 ml olive oil
  • 80 ml beer
  • 1 tsp salt
  • pepper

For the topping:

  • 3 red bell peppers
  • 2 yellow Bell peppers
  • 1 onion
  • 100 g cherry tomatoes
  • 2 tbsp of olive oil
  • 3 tsp paprika powder
  • 1 handful fresh basil
  • salt and pepper

Instructions

For the dough:

  • Put the flour in a large bowl and season with salt and some pepper. Add the olive oil and the beer. Mix well until you have a smooth and supple dough. Let it rest for a short time.

For the topping:

  • Meanwhile, dice the peppers, cut the onion into half rings and cut the cherry tomatoes in half.
  • Heat the olive oil in a pan and fry the onion until transparent. Add the bell peppers and cherry tomatoes and continue steaming for 3-4 minutes. Season the vegetables with paprika powder, salt and pepper.
  • Roll out the dough thinly on a baking tray and spread the steamed vegetables evenly on top.
  • Bake at 180°C for about 15-20 minutes. Take out and cut into pieces. Serve hot or cold.
