Spanish Coca de Verdura

For the dough:
- 300 g spelt flour
- 125 ml olive oil
- 80 ml beer
- 1 tsp salt
- pepper
For the topping:
- 3 red bell peppers
- 2 yellow Bell peppers
- 1 onion
- 100 g cherry tomatoes
- 2 tbsp of olive oil
- 3 tsp paprika powder
- 1 handful fresh basil
- salt and pepper
For the topping:
Meanwhile, dice the peppers, cut the onion into half rings and cut the cherry tomatoes in half.
Heat the olive oil in a pan and fry the onion until transparent. Add the bell peppers and cherry tomatoes and continue steaming for 3-4 minutes. Season the vegetables with paprika powder, salt and pepper.
Roll out the dough thinly on a baking tray and spread the steamed vegetables evenly on top.
Bake at 180°C for about 15-20 minutes. Take out and cut into pieces. Serve hot or cold.
