Thai Papaya Salad

The Thai salad "Sam Tom" consists of green, unripe papaya, grated carrots, beans and a sweet and spicy sauce.

Ingredients

  • 1-2 red chiles
  • 1 hand full long beans alternatively string beans or green beans
  • 6 cherry tomatoes
  • 1 tbsp garlic
  • 2 tbsp roasted peanuts alternatively cashews
  • 4 tbsp lime juice
  • 4 tbsp soy sauce
  • 2 tbsp cane sugar
  • 1/4 green papaya
  • 1 carrot

Instructions

  • Cut long beans into 3 cm (1 inch) long pieces. If you use other beans, you have to cook them for 10 minutes in salt water. Long beans can be used raw.
  • Dice tomatoes. Finely chop chilies and garlic. Cut the papaya lengthwise in half and remove the seeds. Cut the papaya and carrot into very fine strips or julienne. In Thailand they use a special strip peeler for this. 
  • In a large mortar, mix the chilies, green beans, tomatoes, garlic and peanuts and lightly crush them.
  • Add lime juice, soy sauce and sugar to the mortar and mix. Add the papaya and carrot and mix well with the sauce.

Notes

If you do not have a mortar you can put the ingredients for the sauce in a blender and then crush all the ingredients in a large bowl by hand or a potato masher. The green papaya used for this salad is the unripe fruit. You can get them in the Asian market or sometimes in large supermarkets. If you can not find any, you can alternatively use grated parsnips, zucchini or firm cucumber. The most important component in this salad is not the papaya, but the sauce.
