Seitan Gyros with Tzatziki

Seitan:
- 1 cup seitan-flour vital wheat gluten flour
- 2 tsp paprika powder
- 1 tsp smoked paprika
- 1/4 tsp chilli powder
- 2 tbsp soy sauce
- 1 cup water
- 1 tsp sesame oil
Marinade:
- 1 onion
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tsp oregano
- ½ tsp cumin
- ½ tsp Marjoram
- 1 tsp parsley
- 2 tsp onion powder
- ½ tsp ground pepper
- ¼ tsp salt
For the Tzatziki:
- 500 ml vegan yoghurt
- ½ cucumber
- ½ bunch fresh mint
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tbsp lemon juice
- salt and pepper
For the Sides:
- 1 cup brown rice
- ½ cucumber
- 100 g cherry tomatoes
- ¼ lettuce
- ½ red onion
For the Gyros:
Mix seitan flour with paprika powder and chili powder. Mix the water with the soy sauce and the sesame oil. With your hands knead 2/3 of the liquid into the seitan powder. The result should be a firm dough without dry spots. Knead in more liquid if needed.
Shape the dough into flat cakes and steam them for about 45 minutes in a steamer hood.
Then let it cool down and cut it into thin, long strips. For the marinade, cut the onion into strips and finely chop the garlic. Then mix with the remaining ingredients in a large bowl. Place the seitan strips in the marinade and leave to soak in the marinade for at least 2 hours.
Fry the gyros with the onion in a hot pan with some oil until crisp.
For the Sides:
Cut all ingredients for the salad into bite-sized pieces and mix together.
Serve gyros with rice, salad and tzatsiki.
