Today I will show you a super light and refreshing summer dish: Zoodles with sesame sauce. The dish is ready in under 15 minutes and you don’t even have to turn on the stove. It’s a great raw vegan dish that fills you up without sitting heavily on your stomach. Super healthy and delicious!
The cute word Zoodles is a word creation from Zucchini and Noodles. For Zoodles, healthy vegetables are used as a pasta substitute and with the help of a spiral slicer they are cut into the form of long spaghetti.
Low calorie and healthy
The big advantage is that zoodles contain hardly any carbohydrates and have few calories. 100 grams of zucchini contain just 2.2 grams of carbohydrates and only 19 kcal. The fat content is also below one percent. This makes it possible that with Zoodles you don’t have to pay attention to the amount you eat, but you can eat as much as you want.
Zoodles are also perfect for people with gluten intolerance because they are gluten-free and vegan by nature.
How to prepare Zoodles
Making Zoodles is really easy. You only need a spiral cutter. It’s definitely worth the purchase. Because you can make vegetable spaghetti or ribbon noodles from all kinds of vegetables in no time at all. I have made the best experiences with spiral cutters where the vegetables are clamped into, like with this one here*.
Making zoodles without a spiral cutter
If you don’t have a spiral cutter, you can also make Zoodles with a traditional peeler or vegetable slicer. First quarter the zucchini lengthwise and then cut the quarters into wide strips with the peeler. In this way the zoodles are more reminiscent of wide ribbon noodles than spaghetti.
You can eat the Zoodles directly raw and only pour sauce over them. But if you like the noodles a little softer, you can cook them in salted water for 1 minute or just pour boiling water from the kettle over them.
Which Sauce?
With Zoodles you can eat any sauce that you would eat with normal pasta. In this recipe I introduce you to my Zoodles with sesame sauce. But you can put anything you like on the Zoodles from all’arrabbiata to mushroom ragout, lentil bolognese or homemade pesto.
Zoodles with sesame sauce
Ingredients
For the Zoodles:
- 1 small zucchini
- 1 carrot
- 1 handful fresh parsley
- 1 spring onion
- 1 tablespoon sesame
For the Sesame Sauce:
- 3 tablespoons Tahini sesame paste
- ½ teaspoon vegetable stock powder
- 1 tablespoon lemon juice
- salt and pepper
- 1 garlic clove optional
Instructions
- Cut zucchini and carrot into thin spirals with a spiral slicer.
- Finely chop parsley and spring onion.
- For the sauce, mix the tahini with some water until a creamy, thin consistency is achieved.
- Season the sesame sauce with vegetable stock, lemon juice, half of the parsley, salt and pepper. If you like you can add a clove of garlic.
- Arrange the vegetables in a bowl and mix with the sauce. Sprinkle with the remaining parsley, spring onions and sesame seeds and serve.
