Today I present you a short and easy recipe that is perfect for the end of the day: a delicious summerroll bowl with spicy peanut sauce. Remember my Vietnamese summerrolls with peanut dip? This recipe is the perfect variant for lazy people and all those who don’t like rolling the summerrolls by hand.

Instead of wrapping the ingredients in rice paper, in this recipe they are simply arranged nicely in a bowl. This saves a lot of time and work without losing any of the amazing flavours. You just throw all the ingredients together, pour the sauce over it and dinner is ready. This summerroll bowl is ready in less than 20 minutes and tastes fresh, healthy and damn delicious.

What’s even better: The summerroll bowl is perfect to prepare in advance. To do this, just cut the vegetables the evening before and store them in the fridge. The same goes for the sauce. Simply stir it together, place it in an airtight container and put it in the fridge until serving. Then all you have to do before eating is to pour boiling water over the rice noodles and warm up the sauce – and lunch is ready.

For the Bowl:

  • 1 sachet glass noodles
  • 1 block tofu
  • 2 tbsp sesame oil or other oil
  • 4 tbsp teriyaki sauce
  • ½ red pepper
  • 1 avocado
  • 1 carrot
  • ½ head Roman lettuce
  • ¼ cucumber
  • 1 spring onion
  • 1/4 bunch fresh mint or coriander
  • 1 lime

For the Peanut Sauce:

  • 2 tbsp sesame oil or other oil
  • 2 tsp red curry paste
  • 1 can roasted peanuts
  • 1 can coconut milk
  • 2 tbsp cane sugar


For the Peanut Sauce:

  • Put the oil in a small saucepan and heat. Add the curry paste and stir well.
  • Deglaze with coconut milk and stir well.
  • Chop the peanuts into small pieces and add to the mixture. Cook until a creamy consistency is reached.
  • Season with cane sugar and salt.

For the Bowl:

  • Squeeze out the tofu with a clean kitchen towel to remove excess moisture. Cut the tofu into cubes and fry in a pan with oil until all sides are brown.
  • Deglaze the tofu with teriyaki sauce and fry for another minute until the sauce is absorbed. Set aside.
  • For the rest of the bowl, cut the vegetables and salad into bite-sized pieces and arrange in a bowl.
  • Pour hot water over the glass noodles and let them steep for a minute.
  • Pour the glass noodles and tofu into the bowl and garnish with mint, coriander and fresh lime juice. Serve with the peanut sauce.
