Greek Farmer’s Salad

Greek farmer’s salad is one of my favourite salads in summer. It is one of the classics that almost everyone knows and likes. The only negative thing about the typical Greek farmer’s salad is that it usually contains feta cheese. But since I finally found a good recipe for vegan feta made of tofu a few weeks ago, I started veganizing the popular farmer’s salad right away.

The preparation is very easy and you can pack it into a container and take it with you. So it’s the perfect meal on the go or for the office. Especially in summer, when you’re always looking for a light and fresh meal that doesn’t weigh you down.

Our vegan Greek farmer’s salad also provides plenty of vitamins and minerals, as salads generally do. But the tofu feta also adds valuable proteins. You can find the recipe for our homemade Tofu-Feta here. If you don’t have time to make the vegan feta yourself or just don’t like tofu feta, I can recommend the vegan feta from Bedda* or the Greek White Block from Violife*. Both can be bought in big supermarkets in Germany or online.

Greek farmer’s salad is not only a tasty side dish but can also serve as a starter or even as a light main course. The dressing is traditionally made from high quality olive oil and lemon. Flavoured with oregano, salt and pepper. Delicious and healthy food can be that simple.

Ingredients

  • 1 cucumber
  • 1 red pepper
  • 1 green pepper
  • 2 heads cos lettuce
  • 500 g tomatoes
  • 2 red onions
  • 200 g vegan feta
  • 100 g olives
  • salt and pepper
  • garlic salt optional
  • 1 lemon
  • 125 ml olive oil
  • 1 tbsp oregano

Instructions

  • Wash the cucumber and cut into thin slices. Wash the peppers, remove the seeds and cut into thin strips. Wash the tomatoes and cut into slices. Peel onions and cut into fine rings. Dice the vegan feta. Drain olives.
  • Put cucumber, paprika, tomatoes, onions, vegan feta and olives in a bowl.
  • Mix olive oil, lemon juice, oregano, salt and pepper to a sauce. Pour the sauce over the salad. Stir and enjoy.
